Peach Cobbler Parfait<\/h1>

August is another favorite time here on the farm because it is National Peach Month. One of our favorite crops are delicious peaches. Peaches are high in vitamin A & C, so they’re a healthy, fresh snack when you’re on the go. There are two main varieties of peaches: clingstone & freestone peaches. Freestone peaches make it easier to remove the peach pit from it’s flesh. Stop in & stock up on these seasonal favorites & enjoy some of these farm-suggested recipes.<\/p>\n

Ingredients<\/h4>\n

2 tbsp. butter<\/p>\n

\u00bd cup brown sugar<\/p>\n

\u00bc cup chopped pecans<\/p>\n

1 cup gluten-free baking mix<\/p>\n

\u00be cup milk<\/p>\n

1 egg<\/p>\n

2 cups fresh sliced peaches (or 15 oz. can sliced peaches in heavy syrup)<\/p>\n

1 cup sugar (mixed into peaches)<\/p>\n

8 oz. whipped topping<\/p>\n

Preheat oven to 375 degrees. Melt butter in 8×8 in baking dish. Roast pecans on a cookie sheet for 10 minutes. Combine baking mix, milk, brown sugar, and egg. Pour into baking dish. Carefully scoop out peaches and distribute over batter. Pour the rest of peach syrup on top. Bake 35 minutes and allow to cool completely. In tall glass layer cobbler, pecans, and whipped topping. Serve immediately.<\/p>\n<\/div><\/section><\/div>
